Operational Excellence

• Ensure the smooth operation of the venue on a daily basis: create a warm environment with a smiling team attentive to customers.
• Achieve operational excellence: act as a communication link between different departments, between the front-of-house team and the kitchen, ensuring smooth flow of information across the board.
• Propose ideas to improve the customer experience and maintain a continuous improvement mindset. Ensure the venue maintains a high rating on social media.
• Manage privatizations with professionalism and precision.
• Ensure 100% positive resolution of customer complaints and resolve any issues during service.

Performance Analysis:

• Manage the consolidated P&L.
• Ensure average spend per customer.
• Alert and propose clear actions if the budget is not respected.
• Manage optimized scheduling: adjust staffing according to activity while ensuring proper management of people costs.
• Ensure the monthly inventory is completed.

Management:

• "Be exemplary" in managing both the front-of-house and kitchen teams.
• Maintain a motivated team with minimal turnover.
• Supervise, motivate, and help the team succeed.
• Energize the team and create a positive, active atmosphere.
• Ensure the transmission of Big Mamma’s values.
• In coordination with headquarters, create and lead a training program for the team.
• Encourage active participation during services by leading by example and providing feedback on processes, communication with the team, and with customers.

Your main responsibilities will include:

Quality Management

  • Ensure the quality, quantity, and consistency of dishes at the pass.

  • Oversee the speed and timely delivery of dishes at the pass.

  • Collaborate on menu changes with the Executive Chef: propose new seasonal recipes, draft recipe sheets, implement menu updates, train the team, and take part in research & development (R&D) sessions.

Kitchen Operations Management

  • Ensure compliance with hygiene and safety standards.

  • Monitor and manage monthly food cost / F&B performance against budget targets.

  • Manage kitchen staff costs / monthly personnel expenses in line with budget objectives.

  • Oversee staff scheduling.

  • Ensure proper use and maintenance of kitchen equipment.

Team Leadership & Development

  • Approve new hires within the team, aligned with HR recruitment criteria.

  • Oversee onboarding of new kitchen recruits: preparation for their arrival, and weekly follow-up from their first week.

  • Train and support the kitchen team daily: share vision, transfer knowledge, delegate responsibilities, propose training initiatives, and conduct talent evaluations.

  • Ensure strong team cohesion and understanding, including integration of kitchen porters and updates within the team.

  • Monitor and support the team’s training progress.

  • Guarantee effective communication between the kitchen, front of house, and bar.

  • Participate in at least one service per week in collaboration with the Sous Chefs.

En tant que Assistant Manager, vous jouez un rôle clé dans l’équipe de direction du pôle salle. Vous participez aux prises de décisions majeures du lieu et au déploiement de la stratégie aux côtés des autres chefs de pôles (CA, People cost, Events BtoC/BtoB…). Vous pilotez aux côtés du manager salle, une équipe de 70 personnes ultra motivée!


Ta mission:

1. Management

  • Accompagner et faire monter en compétences l’équipe managériale de salle

  • Superviser les sujets RH : Plannings, Recrutement et disciplinaire

  • Assurer l’intégration, la performance et le bien être des équipes

  • Identifier les talents et promouvoir la promotion interne


2. Performance

  • Aider à la gestion coût de masse salariale de la salle conformément aux objectifs de CA

  • Garantir la meilleure expérience client (physique et digitale)

  • Maîtriser les outils de service digitaux et leurs développements (Deliverect, Lightspeed, Sunday)

  • Chapeauter la caisse centrale
