As a GENERAL MANAGER, you will report to the COO Germany, and your areas of responsibility will include the following:


Operational Excellence:

• Ensure the smooth operation of the venue on a daily basis: create a warm environment with a smiling team attentive to customers.
• Achieve operational excellence: act as a communication link between different departments, between the front-of-house team and the kitchen, ensuring smooth flow of information across the board.
• Propose ideas to improve the customer experience and maintain a continuous improvement mindset. Ensure the venue maintains a high rating on social media.
• Manage privatizations with professionalism and precision.
• Ensure 100% positive resolution of customer complaints and resolve any issues during service.

Performance Analysis:

• Manage the consolidated P&L.
• Ensure average spend per customer.
• Alert and propose clear actions if the budget is not respected.
• Manage optimized scheduling: adjust staffing according to activity while ensuring proper management of people costs.
• Ensure the monthly inventory is completed.

Management:

• "Be exemplary" in managing both the front-of-house and kitchen teams.
• Maintain a motivated team with minimal turnover.
• Supervise, motivate, and help the team succeed.
• Energize the team and create a positive, active atmosphere.
• Ensure the transmission of Big Mamma’s values.
• In coordination with headquarters, create and lead a training program for the team.
• Encourage active participation during services by leading by example and providing feedback on processes, communication with the team, and with customers.
• Participate in recruitment: anticipate staffing needs with the recruitment team at headquarters, welcome new staff, and optimize the team structure.
• Ensure HR follow-up: lead weekly management meetings with direct reports (managers and chefs). Identify and recognize team talent to nurture Big Mamma’s meritocracy.

• Connaissance des techniques de vente pour optimiser ton ticket moyen et participer à la performance économique du restaurant.

Tes missions :

• Gérer en autonomie une des parties de la cuisine dans une brigade de 5 à 10 personnes. 
  
• Gestion et management de l'organisation de ta partie : préparations quotidiennes, mises en place dans le respect de l'hygiène. 
  
• Etre garant de la qualité d'exécution de nos recettes et du respect des fiches techniques. (vérification des mises en place, conformité goût/saveur de nos desserts génériques)
  
• Etre garant de l'intégration et de la formation des nouveaux arrivants pour les faire monter en compétences.

La Felicità, c’est le Food Market canon de Big Mamma! Un lieu unique de 4500m² niché dans le 13e arrondissement au cœur de Station F.

60000 clients par mois, des privatisations totales de 2000 personnes en version cocktail dinatoire! Bref, un vaisseau amiral dans lequel on ne s'ennuie jamais!

En tant que Assistant Manager, vous jouez un rôle clé dans l’équipe de direction du pôle salle. Vous participez aux prises de décisions majeures du lieu et au déploiement de la stratégie aux côtés des autres chefs de pôles (CA, People cost, Events BtoC/BtoB…). Vous pilotez aux côtés du manager salle, une équipe de 70 personnes ultra motivée!


Ta mission:

1. Management

• Accompagner et faire monter en compétences l’équipe managériale de salle

• Superviser les sujets RH : Plannings, Recrutement et disciplinaire

• Assurer l’intégration, la performance et le bien être des équipes

Your Mission:

Vos principales responsabilités seront les suivantes :

Responsable de la qualité

• Responsable de la qualité, de la quantité et de la régularité des plats au passe.

Management:

"Edmondo" (Hamburg) is looking for a passionate Head Chef (M/W/D): join us in a stunning historic venue - a former 1897 bank building with golden vault doors - and bring authentic Italian cuisine to life; you’ll lead our kitchen in creating exceptional dishes with true Italian flair.

Your main responsibilities will include:

Quality Management

• Ensure the quality, quantity, and consistency of dishes at the pass.

We are looking for a Pizzaiolo  for our restaurant Coccodrillo in Veteranenstrasse 9, 10119 in Berlin.

Your Mission:

• Guaranteeing pizza quality
• Perfect knowledge of the ingredients used
• Responsible for the speed of execution / rate of cooking and preparation
• Responsible for the proper maintenance of equipment and alerting the operator to any need for replacement
• Responsible for preservation of ingredients
• Responsible for the cleanliness of the area before, during and after service

I tuoi obiettivi: 

• Competenze base di cucina
  
• Supporto alla cucina nella mise en place e il servizio
  
• Capacità di riprodurre una ricetta a seguito di una formazione
  
• Conoscenza base dell’utilizzo del forno

I tuoi Obiettivi:

• Gestione stock, inventario e comprensione Food Cost
• Conoscenza base della direzione artistica del gruppo
• Controllo qualità e garante della mise en place, conoscenza in materia di igiene e di sicurezza
• Gestione del pass e del servizio
• Conoscenza delle basi e delle tecniche di cucina, riproduzione ricette e conoscenza della pasta fresca
• Formazione di figure junior, Onboarding e Team Motivation
