Comptable – Paris

1- Comptabilité Fournisseurs/Interco/ Règlements

• Gestion de la boite mail et des relations avec les fournisseurs

• Communication avec les équipes allemande (directeur,F&B,RH,CG)

• Saisie des factures

• Gestion des paiements fournisseurs

• Gestion des notes de frais plus mise en paiement

• Révision comptable

2- Ventes / Cash in

• Saisie de la banque

• Maîtriser le cadrage mensuel des flux d’encaissements

• Savoir justifier des soldes restants au bilan à la clôture de chaque mois

3- Clôture

• Maîtriser les écritures de clôtures mensuelles (FNP ; CCA)

• Savoir justifier les soldes de cut-off au bilan à la clôture de chaque mois

• Communication avec l’expert comptable

4- Contrôle interne

QUALITES REQUISES

• Anglais courant (l’allemand est un plus)
• BTS + 3 ans d’expérience en compta général
• La connaissance de Netsuite est un plus

Acheteur(se) Groupe - Paris

Nous recherchons un(e) Acheteur(se) Groupe passionné(e) et structuré(e), qui pilotera, au sein d’une équipe de trois acheteurs Groupe, certaines familles de produits food & non-food destinées à l’ensemble de nos trattorias en Europe, du sourcing à la négociation jusqu’au référencement.

Le poste est rattaché à la Directrice Achats & Logistique Groupe, au sein du département F&B de Big Mamma.

TES MISSIONS : 

1. Sourcing et construction de l'offre groupe

- Identifier, sourcer et référencer les produits food et non-food destinés à l’ensemble des trattos.

- Construire et maintenir un catalogue produits Groupe cohérent et déployable dans plusieurs pays.

- Collaborer avec Chefs, Direction Artistique, Opérations et les F&B pays pour adapter l’offre aux besoins pour proposer innovations, saisonnalité et alternatives.

2. Stratégie Achats et Performance économique

- Définir et exécuter des stratégies d’achat adaptées : appels d’offres, négociations saisonnières, négociations au cours…

- Suivre les évolutions marché (matières premières, inflation, risques)

- Contribuer à l’élaboration du budget achats, suivi des forecasts, analyse des écarts.

- Optimiser continuellement le rapport qualité / prix / service.

3. Sécurisation & Qualité des approvisionnements 

- Sécuriser les produits stratégiques via sourcing alternatifs et contrats.

- Suivre la qualité, les risques d'approvisionnement et la performance fournisseurs

- Travailler main dans la main avec les F&B Managers de chaque pays et le service Logistique Groupe pour transmettre les informations produits, et accompagner le déploiement dans chaque pays.

4. Gestion & Animation de la relation fournisseurs

- Mettre en place un pilotage structuré : rendez-vous réguliers, KPI, plans d’actions.

- Suivre la conformité documentaire : Charte Big Mamma, engagements RSE, capacité, santé financière…

- Contribuer aux objectifs du Groupe en matière de durabilité et de B-Corp.

TON PROFIL :

- 3–5 ans d’expérience en achats food, FMCG, retail ou restauration.

- Capacité à gérer un périmètre multi-catégories : alimentaires et non alimentaires.

- Expérience en sourcing international ; expérience avec fournisseurs italiens = idéal.

- Forte capacité de négociation et sens analytique.

- Culture du résultat, autonomie et rigueur dans le suivi projets.

- Aisance relationnelle et communication transversale.

- Français et anglais professionnels indispensables (l’italien est un gros plus)

En tant que Assistant Manager, vous jouez un rôle clé dans l’équipe de direction du pôle salle. Vous participez aux prises de décisions majeures du lieu et au déploiement de la stratégie aux côtés des autres chefs de pôles (CA, People cost, Events BtoC/BtoB…). Vous pilotez aux côtés du manager salle, une équipe de 70 personnes ultra motivée!


Ta mission:

1. Management

• Accompagner et faire monter en compétences l’équipe managériale de salle

• Superviser les sujets RH : Plannings, Recrutement et disciplinaire

• Assurer l’intégration, la performance et le bien être des équipes

2. Performance

We are currently searching for a Construction Cost Manager, who will directly report to the Global Construction Cost manager. 

Your mission will to manage and optimize capex budgets across all capital projects, on a European scale.

His / her role includes the management of costs, risk and procurement within the capital investment program from feasibility stage to project completion, ensuring cost reduction activity and value engineering is directed where it will deliver the best results for the business.

MAIN RESPONSIBILITIES

1. Management of Projects

Feasibility Stage: Manage the project feasibility process from initial proposal through scoping and option studies to Board Approval of funding. Identify opportunities, constraints and risks. 

Estimating: Develop and employ modelling and estimating techniques to provide accurate Capex Estimates, rates and costs for an annual spend of up to 80M € across a variety of different types and sizes of new and refurbishment projects. Interrogate and verify Capex Estimates provided by partners. Ensure that they are accurate and fully reflect the scope of works and risks.

Tenders/Procurement: Employ the correct procurement techniques to suit the types of projects, programmes, and initiatives with solutions that will ensure best value is delivered, while giving due consideration to quality and programme. Preparation of necessary documentation. Evaluation of offers. Levelling and Negotiation. Recommendation to the Business. 

Manage Financial Progress of Projects Manage and monitor the financial progress of individual projects through regular communication and reports assessing the potential impact of change on the budgets and also taking account of the effect on the business and ensuring change control procedures are rigidly adhered to. Take up any variances with the appropriate department/individual.

Payment Management: Ensure payments are managed efficiently and within the required timescale.

Contracts and Orders: Preparation of contract documentation in a timely manner to ensure that BM is fully protected at all times. 

Value Engineering Lead valuation engineering studies to achieve budgets and to ensure best value is achieved. Engage with all necessary parties to ensure all proposals are fully investigated, tested and either accepted and applied or rejected as necessary.

Cost Data: Develop and maintain accurate benchmark costs across all Big Mamma concepts by country/area and individual cost elements with an appreciation of BM costs within the wider hospitality fit-out industry.

2. Procurement Process implementation and Best Practices

Supplier reliability Check (includes consultants and contractors) : Implementation and use of a supplier assessment solution 

Sourcing and Purchasing process implementation: Market analysis, Needs & Specifications definition, Sourcing, RFI & NDA, RFP, Negotiation rounds, contracting process, implementation, hand over.

Supplier Contracts Management: definition of a Big Mamma global agreement template + contract management approach, establish contracts for all suppliers, verify insurance requirements and provisions, ensure performance specifications are available when required

Mini Purchasing training session 1h-2h maximum : procurement approach, best practices, smart tips/techniques, small cases, open discussion about supplier relationship experience, difficulties encountered.

Responsable de la qualité

• Responsable de la qualité, de la quantité et de la régularité des plats au passe.

Sous la responsabilité de la responsable du pôle privatisations de la Felicità, tu contribues principalement au développement et à la commercialisation de nos offres corporate.

• Réflexion sur nos offres (offres de restauration, art de la table, équipe dédiée, animations) et veille concurrentielle
• Développement commercial (prospection et développement d’outils de communication tels que brochures, mailings, vidéos, etc)
• Commercialisation de nos offres auprès des clients (privatisation des espaces et offre de restauration)
• Rédaction des devis jusqu’au suivi de la facturation

Quality Management

Excellence Opérationnelle:

• Garant de la bonne tenue du lieu au quotidien: avoir un lieu chaleureux, une équipe souriante et attentive aux clients

Your Mission:

• Guaranteeing pizza quality
• Perfect knowledge of the ingredients used
• Responsible for the speed of execution / rate of cooking and preparation
• Responsible for the proper maintenance of equipment and alerting the operator to any need for replacement
• Responsible for preservation of ingredients
• Responsible for the cleanliness of the area before, during and after service

I tuoi Obiettivi:

• Gestione stock, inventario e comprensione Food Cost
• Conoscenza base della direzione artistica del gruppo
• Controllo qualità e garante della mise en place, conoscenza in materia di igiene e di sicurezza
• Gestione del pass e del servizio
• Conoscenza delle basi e delle tecniche di cucina, riproduzione ricette e conoscenza della pasta fresca
