AUTHENTIC ITALIAN INGREDIENTS, PRIMA DI TUTTO
Chef Filippo and the whole squadra take great pride when talking about the decade-long relationship with our 150 trusted Italian producers. From Gloria in London, to Circolo Popolare in Manchester, each of them make sure our kitchens are packed with seasonal ingredients sourced across the boot (the not-so-little secret behind all the traditional Italian recipes).
Starting with our beloved Paolo and Gianfranco Rossini, the kings of ham, who’ve been running a family business for over 100 in the very heart of Emilia-Romagna region. Think thin slices of 24-month Prosciutto di Parma, best paired with Chef Alfonso’s warm focaccia.
And if you’re a serious cheese lover, make sure you indulge in our juicy 250g Apulian burratas. Sourced from Sapori di Puglia, a century-old institution in beloved Andria, this is a true statement in our Antipasti section. Or perhaps you want to go for the Parmigiano Reggiano DOP from Caseificio Gennari, in Parma - paired with taggiasca olives is a match made in heaven.
Then, of course, our iconic Mafaldine al Tartufo wouldn’t taste the same without the special Alfredo Romani, who hand-selects only the very best seasonal tartufi for us: think the earthy notes of Tartufo Uncinatum and the rare, delicate aroma of Tartufo Bianco, all harvested the traditional way in the Appennino Italiano.
Grazie, cari produttori…
