At Gloria Trattoria London, our squadra of pizzaioli doesn’t only make dough, they nurture it. 48 hours of resting, rising, and dreaming of mozzarella. Made in-house, every single day. Expect classic crispy-soft pizze Ruota di Carretto, alongside bold twists, like the truffle pizza, as naughty as it gets (crust included).
For the most hungry amici… Discover our Pranzetto, a three-course lunch set menu priced £23, featuring indulgent antipasti such as crispy Arancini al Tartufo or creamy burrata with basil pesto. For mains, the half-and-half crispy Neapolitan pizza Dancing Queen: a layer of San Marzano DOP tomato sauce topped with Mozzarella di Bufala, thin slices of Prosciutto di Parma, Pecorino cheese and fresh rocket. Then, add a big spoonful of our Tigramisù for £5 – the not so classic, with a touch of Marsala.

We believe a great Neapolitan pizza comes from great ingredients. That’s why the Squadra crafts every pizza using only the finest Italian prodotti - starting with the unbeatable Caputo Rossa tipo 00 flour, and finishing with some of the finest toppings sourced from across Italy: creamy mozzarella from Puglia, authentic Prosciutto di Parma from Emilia-Romagna, and black truffles harvested in the central regions of the Bel Paese.
After years spent experimenting and learning from the best maestri, our beloved pizzaioli introduced a new version of pizza dough all the way from Napoli to Gloria a revisited version of the classic one but richer in flavour, structure and sponginess. The secret lies in the “biga,” an age-old Italian fermentation method that transforms a simple blend of flour, water, and yeast. Left to rest for 24 hours, this pre-ferment adds depth and character. The dough is then shaped into individual balls and allowed to rest for another 24 hours, creating a crust that is light, airy, and well balanced.
As maestro Francesco says, our Pizza dough is easy to digest and won’t leave you feeling thirsty… (though we won’t judge if you still go for that extra Espresso Martini). Whether you’re loyal to the classic Margherita or prefer to go crazy with bold toppings, our Neapolitan pizzas are made for true carb lovers (the kind who want to indulge without feeling bloated, oops!).

We care about our beloved producers just as much as you care about your dog (and, of course, a true Neapolitan Margherita). For over a decade, the Squadra has worked hand in hand with more than 150 suppliers across the boot, ensuring our menu is an explosive mix of Italian classics, simple products, and playful new twists from our chefs.
It all starts with our generous 250g burratas from Sapori di Puglia - born in the heart of Andria over a century ago - and continues north to Caseificio Gennari in Parma, a true institution when it comes to Parmigiano Reggiano DOP. And of course, there’s our indulgent Prosciutto di Parma DOP from the kings of ham, Paolo and Gianfranco Rossini - think tender and thin slices crowning our Neapolitan Pizza Dancing Queen, making you fall in love fetta after fetta.
Last but never least, our seasonal tartufo nero comes from trusted supplier Alfredo Romani, who hand-selects only the finest tartufi for us. Harvested the traditional way in the Appennino Italiano territories, Alfredo’s loyal pack of sniffer dogs make sure only the very best truffles top our dishes. Trust us, amici - our Double Truffle Pizza at Shoreditch simply wouldn’t taste the same without Signor Romani’s black truffle.

Packed with amore (and yes, plenty of carbs), our group set menu is a feast designed to whisk you and your work squadra — or your big famiglia — straight to the Mediterranean coast. Start with warm, pillowy focaccia and crispy truffle arancini made for sharing, before diving into the true carbo-star of the show, our Pizza Dancing Queen: a thin layer of San Marzano DOP tomato sauce, creamy mozzarella di bufala, delicate prosciutto crudo, Pecorino cheese and fresh rocket (our pizzaioli’s favourite).
And just in case the carbs weren’t quite enough… Here’s the cherry on top: a generous spoonful of our twisted tiramisù, with a touch of Marsala — the perfect dolce to round off the feast, the Italo way.
